VEGAN BANANA AND BLUEBERRY OAT COOKIES

YUMMY AND NUTRITIOUS

These cookies contain lots of nutritious ingredients and are only sweetened by the bananas and a little honey. I love having them for breakfast or as a snack and I hope you enjoy them too.

 

INGREDIENTS: MAKES 10-12 COOKIES

2 tbsp ground flaxseed

5 tbsp water

1 tsp chia seeds

1 banana, mashed

60g blueberries, frozen or fresh if you have them.

60g almond butter

1 tbsp coconut oil, melted

1.5 tbsp maple syrup/honey (melted)

0.25 tsp baking powder

0.25 tsp bicarbonate soda

85g oats

40g ground almonds

1 tbsp Walnuts, chopped

METHOD:

  1. Preheat the oven to 180°C.

  2. Mix the ground flaxseed with the water and chia seeds. Leave to sit for about 5 minutes, stirring occasionally.

  3. Mix in the mashed banana, blueberries followed by the almond butter.

  4. Pour in the coconut oil, maple syrup and stir until well mixed.

  5. Next mix in the baking powder, bicarbonate of soda, oats and ground almonds.

  6. Stir in the walnuts and any other nuts/seeds/fruit you want and leave in the fridge for 5 minutes.

  7. Line a baking tray with baking paper. Using a tablespoon, dollop balls of cookie dough a few centimeters apart. Push them down a little with your fingers and bake in the oven for 15-20 minutes until slightly golden.

  8. Leave in the tray for a few minutes and then move to a wire rack to cool completely.
