STEWED PEARS WITH GINGER
INGREDIENTS:
4 large pears
1 large thumb of ginger
METHOD:
Slice the pear into bite-sized chunks and place in a large pan. I prefer leaving the skin on for the extra fibre but do peel if you prefer no skin.
Grate the ginger into the pan followed by a large splash of water.
Simmer over a low heat with the lid on for 20-30 minutes, stirring occasionally. Add in a little more water if needed.
When the pears have broken down, remove the lid and check the consistency. If the mixture is too liquidy, turn the heat up slightly and continue to cook with the lid off until some of the liquid has bubbled off.
Serve with your choice of toppings and enjoy.
