ROASTED APRICOTS WITH THYME AND MAPLE SYRUP
INGREDIENTS:
1 punnet apricots, sliced in half with stones removed
2 tbsp fresh thyme
A drizzle of maple syrup
METHOD:
Preheat the oven to 180C and line a baking sheet with grease proof paper.
Halve the apricots and arrange on the baking sheet.
Drizzle with maple syrup and scatter with the fresh thyme.
Bake for 15-20 minutes until soft and bursting.
