ROASTED APRICOTS WITH THYME AND MAPLE SYRUP

BURSTING WITH FLAVOUR

I enjoy eating these with kefir (yoghurt also works well), granola and toasted almonds for breakfast!

 

INGREDIENTS:

1 punnet apricots, sliced in half with stones removed

2 tbsp fresh thyme

A drizzle of maple syrup

METHOD:

  1. Preheat the oven to 180C and line a baking sheet with grease proof paper.

  2. Halve the apricots and arrange on the baking sheet.

  3. Drizzle with maple syrup and scatter with the fresh thyme.

  4. Bake for 15-20 minutes until soft and bursting.
