BLUEBERRY AND BANANA PANCAKES

and perfect for Pancake Day! I often make these for friends on the weekend and love mixing and matching different toppings. I hope you enjoy!

 

INGREDIENTS: SERVES 3

80g oats

120ml your choices of milk (I prefer oat/almond)

1 banana

1 egg

1 tsp baking powder

1 tsp vanilla extract

150g frozen blueberries

1 tbsp chia seeds

Extra Virgin Olive Oil to cook

Toppings: yoghurt, cacao nibs, fresh berries, cinnamon, hemp seeds, nut butter, maple syrup.

METHOD:

  1. Add the oats to a blender and blitz into a flour consistency (roughly 20-30 seconds).

  2. Add the milk, banana, egg and baking powder into the blender and whizz until smooth. 

  3. Gently fold in the frozen blueberries & chia seeds.

  4. Heat the oil in a non-stick pan over a medium heat. Place large dollops of the batter into the pan and spread out into thick circles. 

  5. Cook until you see bubbles forming on the top of each pancake before flipping and cooking on the other side. Transfer onto a plate and repeat with the remaining batter until finished. 

  6. Serve with your choice of toppings.
