APPLE, PEAR AND GINGER COMPOTE

Bowls of apple, pear and ginger compote

WARMING AND SOOTHING

My aunt and uncle dropped round some homegrown apples which I immediately made into a compote with pear and grated ginger to add to my breakfasts. I would recommend keeping the skins on for the extra fibre and feel free to incorporate other fruits/spices for added variety. Some people find fruit easier to digest when cooked and ginger has a wonderfully soothing effect on the digestive system.

INGREDIENTS: MAKES APPROXIMATELY 5 SERVINGS

5 apples

2 pears

1 large thumb ginger (feel free to add more if you can handle the spice), peeled

Optional: 1 pinch cinnamon/ 1 tablespoon orange zest

METHOD:

  1. Wash and chop the fruits and place in a pan. Grate the ginger to the mix followed by the cinnamon/orange zest if using.

  2. Add a splash of water to the pan and simmer over a low heat for about 30-40 minutes, stirring occasionally. Add a little more water if needed.

  3. When the apples and pears have broken down, remove the lid and check the consistency. If the mixture is too liquidy, turn the heat up slightly and continue to cook with the lid off until some of the liquid has bubbled off.

  4. This will last a week in the fridge or can easily be frozen too (once cool).
