AMARETTI BISCUITS

Amaretti biscuits dusted with icing sugar on a wire rack

SO MOREISH!

I’ve been baking them non stop over the past few weeks and feel they would be great for the festive season.

 

INGREDIENTS: MAKES ABOUT 15 BISCUITS

Whites of 2 large eggs 

200g ground almonds

100g coconut sugar (or alternative, I’ve used both caster and brown sugar which have worked too)

10ml almond extract 

2 tbsp icing sugar

METHOD:

  1. Preheat the oven to 150ºC and line a baking sheet with baking paper.

  2. Whisk the egg whites until they reach medium peaks.

  3. Using a spatula, gently fold the sugar, ground almonds and almond extract into the egg whites until a wet dough forms.

  4. Wet your hands to prevent sticking and roll the dough into 1 inch balls. Roll the biscuits in the icing sugar and place them on the prepared baking sheet.

  5. Bake for 20 to 25 minutes. Allow the cookies to cool down for at least five minutes before serving. Enjoy!
