WINTER SPICE GRANOLA
INGREDIENTS:
200g oats
100g almonds, roughly chopped
60g hazelnuts, roughly chopped
60g pecans, roughly chopped
100g mixed seeds (sunflower, pumpkin)
2 tsp cinnamon
1.5 tsp ground ginger
¼ tsp nutmeg
40g coconut/olive oil (melted)
80g honey/maple syrup
Zest of 1 large orange (or 2 smaller ones)
1 handful dried fruits e.g. cranberries, raisins, fig, dates etc.
Optional: 1 palmful cacao nibs, coconut flakes
METHOD:
Preheat the oven to 180C and line a baking tray with parchment paper.
Place all the ingredients apart from the dried fruit, cacao or coconut flakes into a bowl and mix until well coated.
Bake in the oven for 30 minutes stirring every 10 minutes until golden.
Leave to cool before adding your dried fruit/coconut/cacao if desired.
Once completely cool, store in an airtight container for a few weeks.
