TOMATO, CAPER, OLIVE & FETA SALA
INGREDIENTS:
2 beef tomatoes, sliced
1 handful olives, halved (I used kalamata)
1/2 tbsp capers, roughly chopped
1 handful feta, crumbled
Sprinkling thyme (other herbs would work too e.g. parsley, basil, rosemary etc)
Pepper
Drizzle of extra virgin olive oil
Drizzle of balsamic vinegar
Toasted seeds (for a crunch)
METHOD:
Mix all the ingredients together, Drizzle the oil and vinegar over the top followed by toasted seeds and enjoy!
