CHOCOLATE ORANGE COOKIES

SATISFYINGLY EASY

I have been baking these non stop for the last few days and delivering them to friends on my daily walk whilst in lockdown. So far, they have had good reviews but do let me know how you get on! I use buckwheat flour but they do work well with other gluten filled and non gluten flours. If you’re not so keen on orange and chocolate together, they taste just as good without.

 

INGREDIENTS: MAKES 14-16 COOKIES

120g dark chocolate (preferably at least 70%)

25g cocoa powder

120g buckwheat/alternative flour

1 large pinch salt

½ tsp bicarbonate of soda

125g palm sugar/soft light brown sugar

70g soft unsalted butter

1 tsp vanilla extract

2 large eggs

120g dark chocolate chips

Zest of 1 orange

METHOD:

  1. Preheat the oven to 180°C and line a large baking tray with baking parchment.

  2. Melt the dark chocolate in a bowl over a pan of simmering water. In a separate bowl, measure the buckwheat flour, salt, bicarbonate of soda and cocoa powder, using a fork to mix well.

  3. In another bowl beat together the butter, sugar and vanilla extract (using a handheld whisk/freestanding mixer) until light and fluffy. Add in the melted chocolate and continue to beat until well mixed, followed by the eggs - one at a time.

  4. Slowly mix in the dry ingredients and then fold in the orange zest and chocolate chips.

  5. Spoon rounded tablespoons of cookie dough on the baking parchment, leaving a few centimetres between each one. Bake in the oven for about 8-10 minutes until the edges are slightly firm but gooey in the middle (they get a little firmer as they cool). Leave to cool for a few minutes before transferring to a wire rack to cool completely.
