CHOCOLATE ORANGE COOKIES
INGREDIENTS: MAKES 14-16 COOKIES
120g dark chocolate (preferably at least 70%)
25g cocoa powder
120g buckwheat/alternative flour
1 large pinch salt
½ tsp bicarbonate of soda
125g palm sugar/soft light brown sugar
70g soft unsalted butter
1 tsp vanilla extract
2 large eggs
120g dark chocolate chips
Zest of 1 orange
METHOD:
Preheat the oven to 180°C and line a large baking tray with baking parchment.
Melt the dark chocolate in a bowl over a pan of simmering water. In a separate bowl, measure the buckwheat flour, salt, bicarbonate of soda and cocoa powder, using a fork to mix well.
In another bowl beat together the butter, sugar and vanilla extract (using a handheld whisk/freestanding mixer) until light and fluffy. Add in the melted chocolate and continue to beat until well mixed, followed by the eggs - one at a time.
Slowly mix in the dry ingredients and then fold in the orange zest and chocolate chips.
Spoon rounded tablespoons of cookie dough on the baking parchment, leaving a few centimetres between each one. Bake in the oven for about 8-10 minutes until the edges are slightly firm but gooey in the middle (they get a little firmer as they cool). Leave to cool for a few minutes before transferring to a wire rack to cool completely.
