BAKED GRANOLA BARS

SUPER SIMPLE

I developed this recipe for a client who was looking for a nutritious sweeter snack option and I loved them so much I wanted to share the recipe with you all. Super simple to make and feel free to substitute the nuts, seeds and dried fruit for alternative varieties if you prefer.

 

INGREDIENTS:

100g oats

60g almonds/alternative nut or seed, roughly chopped (or alternative nut/sunflower/pumpkin seeds)

30g ground flaxseed

40g sunflower seeds

40g ground almonds

80g chopped dates/alternative dried fruit

30g coconut oil

80g maple syrup

2 tablespoons nut butter 

Optional: dark chocolate for topping 

METHOD:

  1. Preheat the oven to 160°c

  2. Add all the ingredients apart from the coconut oil, maple syrup and almond butter into a bowl and stir until evenly mixed. 

  3. Add the almond butter, coconut oil and maple syrup into a small saucepan and gently melt. 

  4. Remove from the heat and pour into the oat mixture, stirring until all the dry ingredients are coated.

  5. Place into a lined baking tray and bake for 25-30 minutes until the edges are golden brown. 

  6. Remove from the oven and leave to cool completely. 

  7. Once cool, drizzle with melted chocolate if desired and store in an airtight container.
