BAKED GRANOLA BARS
INGREDIENTS:
100g oats
60g almonds/alternative nut or seed, roughly chopped (or alternative nut/sunflower/pumpkin seeds)
30g ground flaxseed
40g sunflower seeds
40g ground almonds
80g chopped dates/alternative dried fruit
30g coconut oil
80g maple syrup
2 tablespoons nut butter
Optional: dark chocolate for topping
METHOD:
Preheat the oven to 160°c
Add all the ingredients apart from the coconut oil, maple syrup and almond butter into a bowl and stir until evenly mixed.
Add the almond butter, coconut oil and maple syrup into a small saucepan and gently melt.
Remove from the heat and pour into the oat mixture, stirring until all the dry ingredients are coated.
Place into a lined baking tray and bake for 25-30 minutes until the edges are golden brown.
Remove from the oven and leave to cool completely.
Once cool, drizzle with melted chocolate if desired and store in an airtight container.
