BANANA BREAD

Banana bread served with yogurt and fruit

PERFECT FOR BREAKFAST OR SNACKING

Banana bread appears to be one of the most popular baking choices in lockdown. This recipe isn’t too sweet and has a slightly nutty taste - perfect for breakfast/snacks. I love this toasted with nut butter or yoghurt and fresh berries.

 

INGREDIENTS:

5 small bananas (4 large ones)

1/2 tsp vanilla extract

4 tbsp coconut oil

4 tbsp honey

4 eggs

100g oat flour (I ground up some oats as can't find any flour atm but most types of flour should be ok)

100g ground almonds

1/2 tbsp baking powder

1 tsp cinnamon

1/2 tsp cardamom

1 tsp salt

Optional: small handful chopped walnuts, pecans, chocolate chips

METHOD:

  1. Preheat the oven to 180c and line a loaf tin with baking paper

  2. In a food processor (or by hand) whizz together the banana, coconut oil, honey, vanilla and eggs.

  3. In a separate bowl combine the flour, ground almonds, baking powder, cinnamon, cardamom and salt.

  4. Fold the banana mix into the dry ingredients and pour into the tin.

  5. Bake for 40 minutes until golden and a skewer comes out clean.
